Cookies for breakfast? Always. ā˜•šŸŖĀ

Meet my Pumpkin Chocolate Chip (Breakfast) CookiesĀ and possibly your new favorite healthy fall treat! Today, we are leaning fully into cozy autumn vibes with a treat that highlights the best flavors of the season. Made with a wholesome blend of oat and all-purpose flours, these cookies are incredibly soft, pillowy, and naturally sweetened. They are wholesome enough to grab for a quick breakfast or morning snack on busy days, but decadent enough to satisfy a serious dessert craving. Plus, I’m sharing a few easy chocolate swaps below so you can customize the sugar levels to exactly what you like. Let’s dive into the recipe!

🌿 Ingredient Spotlight: What’s Inside & Why It Matters

One of my favorite things about these cookies is that every single ingredient serves a purpose. There are no filler ingredients here, just wholesome, real-food staples that nourish your body. Here is a look at what makes these cookies both yummy and good for you:

🌾 The Perfect Flour Blend (Oat & All-Purpose Flour): By blending nutrient-dense oat flour with standard white all-purpose flour, we get the absolute best of both worlds! The oat flour brings heart-healthy soluble fiber (beta-glucan) for slow-burning, long-lasting breakfast energy. Oat flour also aids in digestion and keeps your blood sugar stable. Meanwhile, because the all-purpose flour contains gluten, it gives the cookies that beautiful, lighter bakery "puff" so they don't turn out too heavy or dense! Gluten free? Swap the regular all-purpose flour for a high-quality 1:1 Gluten-Free Baking Flour (like King Arthur or Bob's Red Mill).

šŸŽƒ Pumpkin Puree:Ā This fall favorite does more than just add delicious flavor and moisture. Pumpkin is a hidden powerhouse for dietary fiber, adding roughly 7 grams of fiber per cup to help keep your gut happy and running smoothly. It is also incredibly high in Vitamin A (beta-carotene)Ā for immune support and is naturally low in calories.

🄜 Nut Butter (Almond, Peanut, or Seed Butter): Adding a couple of tablespoons of nut butter provides essential healthy fats and plant-based protein. These healthy fats are crucial because they help your body absorb the Vitamin A from the pumpkin and keep you feeling full and satisfied for hours.

šŸ¤ The Power of Nut Butter:Ā Beyond nutrition, nut butter serves as our secret weapon in the kitchen! Since this recipe is egg-free and dairy-butter-free, the natural oils in the nut butter act as the structural "glue" that binds our dough together. It cuts through the high water content of the pumpkin puree, ensuring your cookies turn out beautifully soft and rich rather than spongy or gummy.

🄄 Coconut Sugar: To keep things as natural as possible, we are using coconut sugar instead of highly processed white table sugar. Made simply by boiling and dehydrating coconut palm sap, it retains a beautiful natural color and a rich, caramel flavor that pairs perfectly with autumn spices. It features a lower glycemic index than table sugar and acts as the perfect unrefined, 1:1 swap for traditional brown sugar. Try it out in your baking and see the difference!

šŸ‚ Pumpkin Pie Spice:Ā This warm spice blend does more than just smell like autumn. Cinnamon is famous for its anti-inflammatory propertiesĀ and its ability to naturally assist with blood sugar regulation. Check out my quick and easy recipe: Pumpkin Pie Spice Blend Recipe by Sue

šŸÆ Pure Maple Syrup or Honey:Ā Using a touch of unrefined liquid sweetener alongside our coconut sugar adds a beautiful depth of flavor and moisture, helping us achieve that perfect pillowy texture without causing a harsh blood sugar spike and crash.

šŸŽ A Quick Teacher Side Note:Ā Back when I was teaching health, one of our major units was nutrition. We would dive into all the different nutrients and exactly how they function in the body. Whenever we got to complex carbohydrates, we discussed the importance of dietary fiber. To help it stick, we used to use the catchphrase: ā€œIt keeps your colon rollin’!ā€Ā It was definitely catchy, and my students always remembered it! So when you look at the fiber-rich oats and pumpkin puree in these cookies, just remember, you're giving your body something yummy and gut healthy.

Here's the recipe ~ I hope you love it 🩷

šŸŽƒ Pumpkin Chocolate Chip (Breakfast) Cookies šŸŖ

prep time: 10 minutes cook time: 11-14 minutes yield: 12 cookies

šŸ–Øļø Ā Print Recipe

šŸ›’ The Clean Ingredients

  • 2/3 CupĀ regular All-Purpose flour (80 g) (or 1:1 gluten-free baking flour)

  • 2/3 CupĀ oat flour (61 g)

  • 3 Tbsp coconut sugar

  • 1 tspĀ baking powder

  • 1 TbspĀ pumpkin pie spice

  • 1/4 tsp fine sea salt

  • 1 cup canned pumpkin puree (244 g)

  • 2 Tbsp almond butter (or any other nut butter)

  • 1 tsp Botticelli Extra Virgin Olive Oil for Baking (or any healthy baking oil)

  • 1 Tbsp pure maple syrup or honey

  • 2 tsp pure vanilla extract

  • Optional mix-ins:Ā 1/3 cup of mini chocolate chips and/or pecans or walnuts

🄣 Easy Step-by-Step Instructions

  1. Prep and Oven Setup: Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper to prevent sticking.

  2. Whisk the Dry Mix:Ā In a medium bowl, thoroughly whisk together the all-purpose flour, oat flour, coconut sugar, baking powder, pumpkin pie spice, and sea salt. Set aside.

  3. Blend the Wet Mix:Ā In your large mixing bowl, whisk together the pumpkin puree, nut butter, olive oil, maple syrup (or honey), and vanilla extractĀ until completely smooth.

  4. Combine into Dough:Ā Pour your dry flour mix directly into the large bowl with the wet ingredients. Use a spatula to fold everything together until a uniform dough forms. Note:Ā This will form a thick, sturdy mixture that resembles traditional cookie dough and is solid enough to easily hold its shape.

  5. Fold in the Fun:Ā Gently fold in your mini chocolate chips and/or chopped nutsĀ until evenly distributed throughout the dough.

  6. Scoop & Shape:Ā Divide the dough into 12 equal portionsĀ using a medium cookie scoop (about 2 tablespoons) and drop them onto the baking sheet. For a beautiful, rustic bakery "puff," leave the scoops completely untouched! If you prefer a completely smooth top, use the back of a spoon or damp fingers to press each scoop down into a flat cookie disc. (Keep in mind, they will not spread or change shape on their own while baking!)

  7. Bake to Golden Perfection: Bake at 350°F for 11 to 14 minutes until the edges look set and the tops look completely matte. (If you chose to leave them rustic and puffy, they may need closer to the full baking time to ensure the centers bake all the way through, so be sure to check them around the 11 or 12-minute mark!)

  8. Rest is Best: Let them rest on the hot baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

  9. Storage:Ā Store in an airtight container at room temperature for up to 2 days, or in the refrigerator lined with a paper towel for up to 7 days.

šŸ’” How to Customize the Sugar Levels

As promised, here are a few easy chocolate swap variations you can use to customize this recipe to fit your lifestyle. Sue's Baker Tip:Ā When choosing your chocolate, remember that the higher the cocoa percentage, the less sugar it contains!

  • The Baseline (As Written):Ā Using regular semi-sweet baking chips (like classic Nestle Toll House, which sits around 51–55% cocoa) gives you that traditional, nostalgic chocolate chip cookie sweetness.

  • The Budget-Friendly Upgrade:Ā Swap the semi-sweet chips for Ghirardelli 60% Bittersweet Chips. It naturally bumps up the rich cocoa flavor, keeps your grocery cost low, and drops the sugar content a bit.

  • The Gourmet Upgrade:Ā Buy a standard 85% dark chocolate bar and rough-chop it into rustic chunks. Because an 85% bar has a much higher percentage of pure cacao, it significantly lowers the sugar while giving you big, luxurious bites of rich dark chocolate.

  • The Whole-Food Purist Upgrade:Ā Swap the chips completely for raw cacao nibs. This gives you 100% chocolate flavor, zero added sugar, and a fantastic, crunchy texture.

🩷 Sue's Kitchen Tips:

  • Ditch the Tin—Make Your Own Pumpkin Spice!Ā To get that irresistible, gourmet bakery flavor in these cookies, I highly recommend mixing up your own blend. It takes 5 minutes and features a unique secret ingredient: cardamom!Ā It adds a complex, bright, citrusy-herbal note that lifts the entire blend. Here's the recipe: Pumpkin Pie Spice Blend Recipe by Sue

  • Texture Tracker, Shaping & Baking:Ā Because these cookies are butter-free, they won’t melt or spread outward on their own. However, if you leave the scoops completely untouched, they bake up with a beautiful, rustic bakery "puff"! If you prefer a completely smooth top, press them down gently before baking. Baker's Note:Ā If you leave them completely puffy, they will need the longer baking timeĀ in the oven to make sure the centers bake all the way through!

🐾 Tango's Kitchen Tips:

Since there is chocolate in the main mix, I have to sit this one outĀ šŸ• BUT my favorite humans told me that pumpkin puree is great for a dog’s tummy! If you are chopping up plain walnuts or pecans as an optional mix-in, make sure none drop on the floor for me, because those aren't safe for pups either. I'll stick to a tiny lick of the plain pumpkin spoon instead šŸŽƒ

Psssst ~ wanna hear a secret? My mom told me she’s going to be sharing a canine snack that contains pumpkin šŸŽƒĀ But don’t tell her I told you, or she may hold back on some belly rubs 🤫

🌾 Pantry Staples

šŸ’¬ Frequently Asked Questions (FAQs)

Q: I don't have oat flour in my pantry. Can I make my own?

A:Ā Yes, absolutely! Making your own oat flour is easy and cheaper than buying it pre-ground. Simply add old-fashioned rolled oats (or quick oats) into a high-speed blender or food processor. Blend on high for 30 to 60 seconds until it turns into a fine, powdery flour. Tip:Ā Double-check your measurements afterĀ blending, as 1 cup of rolled oats yields slightly less than 1 cup of fine oat flour! Because of this, I always suggest using a digital kitchen scale if you have one. Measuring by weight (you'll need exactly 65 grams of oat flour for this recipe) is the absolute best way to make sure your dough turns out perfectly every single time.

Q: Can I swap the coconut sugar for more maple syrup or honey?

A:Ā Yes! If you want to use purely liquid sweeteners, you can replace the 3 tablespoons of coconut sugar with an extra 2 tablespoons of maple syrup or honey. Because this adds more liquid to the recipe, make sure to add an extra 2 tablespoons of oat flourĀ to your dry ingredients to keep the dough from getting too wet.

Q: How do I make these cookies 100% gluten-free?

A:Ā Oats are naturally gluten-free, but they are often processed in facilities that handle wheat. If you are baking for someone with a gluten allergy or Celiac disease, just make sure your bag of oats is labeled Certified Gluten-FreeĀ and swap the regular all-purpose flour for a high-quality 1:1 Gluten-Free Baking FlourĀ (like King Arthur or Bob's Red Mill).

Q: Can I use pumpkin pie mix instead of pure pumpkin puree?

A:Ā No, make sure to use 100% pure canned pumpkinĀ (or homemade pureed pumpkin). Canned pumpkin pie mix contains added sugars, water, and spices that will completely throw off the liquid balance and sweetness of this specific dough.

I hope these pumpkin treats bring a little extra warmth and cozy energy to your busy mornings this season! If you bake up a batch, I would love to hear how they turned out for you.
