If you think living a fit life means giving up baked goods, let me change your mind. I have to confess: I have a massive sweet tooth and am always trying to find ways to swap out refined sugars with alternatives like coconut sugar, maple syrup, or honey. These muffins do the trick! Instead of regular all-purpose flour, they are packed with the benefits of oats, and they rely entirely on pure unrefined maple syrup for a rich, natural sweetness. While some treats are definitely worth the indulgence, for a breakfast food, I like to keep the sugar low and the nutritional value high. When I want a morning bake that is both nutritious and satisfying, this recipe is one of my go-tos.

These blender muffins are incredibly fast to make, naturally gluten-free, and perfect for meal prep! Let's look at the ingredients:

🄣 Old-Fashioned Rolled Oats: Instead of all purpose flour, we are pulverizing whole oats right in the blender. I love using oats because they are packed with complex carbs and fiber to keep your energy steady all morning. And, if you're gluten-free, this recipe is perfect for you.

šŸŒ šŸŽ Bananas or Applesauce:Ā Ripe bananas help add moisture and natural sweetness. But if you're like me, the bananas are either not ripe enough for a muffin recipe, or they've been sitting for so long that they are too far gone 😬. So, if you don't have them on hand or prefer a different flavor profile, unsweetened applesauce is a great choice! It keeps the muffins completely tender.

🄚 Eggs: These provide the natural structure and binding power that keeps the muffins light and fluffy.

šŸ¾ Botticelli Extra Virgin Olive Oil for Baking:Ā My friend Monica introduced me to this oil last year after we were discussing healthy options, and I’ve been hooked ever since! Heavy grains like oats need a high-quality fat to stay soft, and this oil keeps the muffins incredibly moist so they don't get rubbery as they cool. And don’t worry, even though it's olive oil, it's designed specifically for baking, so it has a completely neutral flavor and won't leave your sweet muffins tasting like olive oil at all.

šŸ Pure Maple Syrup:Ā I always go for Grade A dark maple syrup because it delivers a warm, caramel-like depth of flavor, satisfying a sweet tooth naturally.

🧬 Baking Powder: People sometimes wonder the difference between baking powder and baking soda. Here's the scoop: unlike baking soda, which needs a heavy dose of outside acid to activate, baking powder carries its own built-in acid. It creates a "double-acting" rise (that's why the label says "double acting"). Once when it hits the wet ingredients in your blender, and again when it hits the heat of your oven, giving our heavy oat batter the power to puff up into a gorgeous, rounded muffin top.

šŸ¤Ž Cinnamon:Ā I love cinnamon in a recipe! Truth be told, I usually add more than the recipe calls for. It adds the most comforting aroma to your kitchen and is packed with great plant antioxidants.

šŸ§‚ Fine Sea Salt:Ā Many people skip salt in breakfast items, but it is actually a vital ingredient! While 1/4 teaspoon seems like a tiny amount, it does a massive job behind the scenes. Not only does it enhance the flavor and perfectly balance the sweetness, but it also helps hold the oat batter together so your muffins don't crumble. Don't worry, it’s just enough to make all the flavors pop, without making your muffins taste salty at all.

🧠 Lessons from the Kitchen

When perfecting this recipe, I learned a few crucial things firsthand that I want to share so your blender muffins turn out flawless on the very first try!

  • The Split-Batch Dilemma:Ā I decided to test a split batch by making half with chocolate chips and half with blueberries. If you try this, keep an eye on your bake times! Frozen blueberries release extra moisture and create steam as they heat up, causing the blueberry side to need a few extra minutes in the oven compared to the dry chocolate chip side. For a perfectly even bake time, it's probably best to bake them in separate pans.

  • Sprouted Oats vs. Rolled Oats:Ā I recently bought a large bag of sprouted oats from Costco to see how they compared to my go-to, Bob's Red Mill Organic Gluten-Free Old-Fashioned Rolled Oats. Because sprouted grains have partially broken-down starches, they are denser and absorb liquids much slower. If you use sprouted oats, your batter will look thin and runny at first. Don't panic! Letting the batter rest for that 10 minute mark is absolutely mandatory here to give the sprouted fibers time to fully hydrate and thicken up before you scoop.

  • Pan Matters (Silicone vs. Metal):Ā This recipe is optimized for a traditional uncoated metal pan (like Nordic Ware Naturals) lined with unbleached paper cups. Metal conducts heat aggressively, forcing moisture out of the berries and popping the muffins into beautiful bakery domes. I tried baking a batch in my silicone muffin pan and they just didn't come out nearly as nice. Silicone acts as an insulator, slowing down the center cooking process, so be prepared to add an extra 5 to 10 minutes to your total timer if you choose to use it.

(Psst—I paired my Nordic Ware pan with If You Care FSC Certified Unbleached Large Baking Cups. Click the links here and check out more items on my Shop My FavoritesĀ page!)

🧁 Oatmeal Blender Muffins Recipe

prep time: 10 minutes (plus rest time) cook time: 18-23 minutes. yield: 12 muffins

šŸ›’ The Clean Ingredients

  • 2 cupsĀ Old-fashioned rolled oats (certified gluten-free if needed)

  • 2 mediumĀ Ripe bananas or swap in 1/2 cupĀ of unsweetened applesauce instead if you don't have bananas on hand

  • 2 largeĀ Eggs

  • 2 tbspĀ Botticelli Extra Virgin Olive Oil for Baking (or another healthy baking oil)

  • 1/3 cupĀ Pure maple syrup (go for Grade A dark) ~ add 1 extra tablespoon if you are using the applesauce swap to make up for the natural sweetness of the missing bananas

  • 1/3 cupĀ Unsweetened almond milk or your milk of choice ~ use 1/4 cup of milk if you use the applesauce option so your batter doesn't become too runny

  • 2 tspĀ Baking powder

  • 1 tspĀ Pure vanilla extract

  • 1/2 tspĀ Ground cinnamon

  • 1/4 tspĀ Fine sea salt

  • Optional mix-ins:Ā 1/3 cup of dark chocolate chips or blueberries (fresh or frozen work perfectly!).

  • For the presentation topping:Ā A small handful of whole old-fashioned oats and extra dark chocolate chips or blueberries

🄣 Easy Step-by-Step Instructions

  1. Preheat & Prep: Preheat your oven to 350°F (175°C) and spray a standard 12-count muffin tin with a healthy oil spray, or use paper liners.

  2. Blend the Base:Ā Add all ingredients (except your optional mix-ins and toppings) directly into a high-speed blender. Remember to make your liquid adjustments if you choose the applesauce option! Blend on high for 30–45 seconds until the batter is completely smooth and creamy.

  3. The Clean Workflow Pour:Ā Instead of fighting with a sharp blender blade later, immediately pour your smooth batter straight out of the blender pitcher into a large glass measuring cup or a small mixing bowl. It is much easier to pour while the batter is a bit thinner, which means you won't waste any batter!

  4. Rest is Best:Ā Let the batter rest right in your bowl or measuring cup for 10 minutes so the oats can finish absorbing the liquid and thicken up beautifully. Sue's Kitchen Tip:Ā This is the perfect time to split the batter in half if you want to make a split batch of both chocolate chip and blueberry! (NOTE: blueberry muffins may need more baking time so it's a good idea to use separate pans).

  5. Fold in the Fun:Ā Gently fold in your chocolate chips or blueberries by hand using a spatula.

  6. Scoop & Top:Ā Scoop the batter evenly among the 12 muffin cups. Before popping them in the oven, sprinkle a few raw old-fashioned oats and a couple of extra chocolate chips or blueberries directly onto the top of each muffin. Gently press them into the batter so they stick.

  7. Bake to Golden Perfection:Ā Bake for 18 to 23 minutes, or until a toothpick inserted into the center comes out clean and the tops are beautifully puffed and golden.

  8. Cool & Enjoy:Ā Let them cool in the pan for about 5–10 minutes, then transfer to a wire rack.

🩷 Sue's Kitchen Tips:

  • Baking with Blueberries🫐 :Ā You can use fresh or frozen blueberries here, but frozen blueberries are sometimes preferred! Once the batter rests, you'll notice it thickens quite a bit. Frozen berries stay firm, don't bleed as easily when you fold them in, and give you a beautiful burst of flavor.

  • Meal Prep Magic:Ā These freeze beautifully! I love popping one in the microwave for 20 seconds before a morning yoga practice or a walk with Tango.

  • Grocery Shopping Tip:Ā If you live in the Northeast and want to try the Botticelli Extra Virgin Olive Oil for Baking, it can be a bit of a treasure hunt! I couldn't find it at my regular Stop & Shop, but Monica's husband found it at Shop-Rite, and I’ve also had great luck spotting it at Price Chopper.

🐾 Tango's Kitchen Tips:

Please feel free to let your favorite canine lick the applesauce spoon, or have a slice of banana. If you use blueberries, I'd love a sample ~ I love them even more when they're frozen! I'd love to lick the bowl, but I know I can't have some of those ingredients šŸ™

I hope these simple muffins bring a little extra warmth to your morning routine. If you whip up a batch, scroll down to the comments section below and let me know which version you tried ~ are you Team Blueberry or Team Chocolate Chip?

Happy baking, friends!

Enjoy,
